Shrimp Noodle Stir Fry

Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 8 oz rice noodles, chow mein noodles, or spaghetti (pre-soaked or cooked per package)
  • 2 cups broccoli florets (or bell peppers, snap peas)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch mixed with 1 tbsp wate
  • 2 tbsp oil

Procedure

  • Soak or cook noodles until just tender; drain and set aside.
  • Mix soy sauce, oyster sauce, and cornstarch slurry for sauce.
  • Heat 1 tbsp oil over high heat in wok or skillet. Cook shrimp 1–2 minutes per side until pink; remove.
  • Add remaining oil, garlic, ginger; stir 30 seconds.
  • Add broccoli; stir-fry 2–3 minutes.
  • Add noodles, shrimp, and sauce; toss 1–2 minutes until coated and hot.
